Description
Black cardamom, Amomum subulatum, also known as Nepali cardamom, comes from the mountainous areas of Bhutan. It is generally cultivated in Nepal, in temperate areas at altitudes above 1000 metres.
This perennial plant, which can reach up to 3 metres in height, develops large, aromatic capsules containing dark brown to black seeds.
Black cardamom has a distinctive olfactory profile because of its traditional drying method over an open fire, which gives it a smoky, earthy aroma. This essential oil is obtained by steam distilling its berries and ranges in colour from dark yellow to brown, with a fluid texture. Its aroma is penetrating, spicy and warm, with nuances reminiscent of green cardamom but a more robust, woody base.
Since ancient times, black cardamom has been valued in various cultures. In cooking, it is a key ingredient in South Asian cuisine, used in curries, stews and spice blends. Its essence is also valued in perfumery and in aromatic products for its characteristic spicy profile.
