Description

For many years, the lemon tree, like other citrus trees, was said to have possibly originated in China or India. However, in 2000, phylogenetic studies revealed that the lemon tree originated in China and the Mediterranean as the result of hybridisation between bitter orange (Citrus aurantium) and citron (Citrus x medica) in the V century BC.
Lemon has been part of the human diet since time immemorial. Its medicinal properties were described by distinguished physicians of antiquity, and it remains a fruit highly valued for its therapeutic benefits, particularly relating to the digestive system.
Lemon essence is extracted from the peel by cold pressing. Distilling the fruit is uncommon, although a few isolated production runs can be found. Distilling the fruit produces an essential oil that is less interesting from an olfactory perspective. Passing through the still causes it to lose its sparkle and freshness.
