Description
Hyssop is a highly aromatic plant that grows naturally in the coastal regions of the Mediterranean and in southern Europe.A sacred plant mentioned several times in the Bible, revered by the Hebrews and described for its therapeutic properties by eminent physicians such as Hippocrates, Dioscorides and Nicholas Culpeper, it also featured prominently in purification and protection rituals.
The plant has been used as a seasoning for centuries, particularly in Italy. It flavours various dishes, cheeses and liqueurs.
There are other varieties of hyssop from which essential oil is also extracted, specifically montana hyssop (hyssopus officinalis ssp decumbens), canescens hyssop (hyssopus canescens ssp decumbens) and common hyssop (hyssopus officinalis ssp officinalis).
Hyssop is a plant with a clear affinity for the respiratory system. Its essential oil is used specifically to relieve respiratory ailments.
The aroma of hyssop essential oil is very refreshing, gently clearing and cleansing the airways.

Common hyssop essential oil is potentially neurotoxic and abortifacient; avoid its use and favour the variety described here (aristatus).
