Description

Star anise is the fruit of the star anise shrub, native to China, which can reach 8 metres in height. The shrub starts producing its 8-pointed star-shaped fruits after 6 years and can continue bearing fruit for more than a hundred years. China accounts for almost all world production. It is also grown in Vietnam, Cambodia and Japan.

It was an English explorer, Thomas Cawendish, who brought star anise to Europe in 1558.

Its aroma is stronger and more powerful than that of aniseed, although they have much in common. In traditional medicine, star anise, like aniseed, is used for its stomachic properties. It is widely used in Asian and Eastern cooking, forms part of the famous “five-spice blend”, and is of course also found in anise-flavoured aperitifs.

As with aniseed, its aroma is either loved or loathed.
